Strawberry Tiramisu

600gr strawberries
170g sugar
1/8l water
6 Leaf gelatine
500gr Mascarpone
1/4l whipped cream
Approx 40 sponge fingers

Bring sugar and water to boil for about 5 minutes, mix with strawberries. Set aside a third of the strawberry sauce. Dissolve the gelatine (previously soaked briefly in cold water to soften it) in the warm sauce and mix with mascarpone cheese. Fold in whipped cream. Soak the sponge fingers in the strawberry sauce and line the bottom of a mould. Add a layer of cream on top, then another layer of sponge fingers, finish with cream as a top layer.  Leave refrigerated for about 6 hours before consumption.
